As a mom of three, it seems we always have four 4L jugs of milk crammed in the fridge. Half of the milk consumed by my youngest who is big on bottles.
Milk getting sour is inevitable. It doesn’t happen regularly, but with the summer heat, and camping, and lets face it- sometimes I buy without checking the expiry date. Milk goes. Sometimes in large amounts.

I hate waste and so am always on a search for good recipes that use up the milk.
This morning, as I decided today was the day I would make my eldest his beloved breakfast; pancakes. I came across this fantastic sour milk recipe.
Sour Milk Pancakes

4 c soured (curdled) milk
1 tsp baking soda
4 eggs
3/4 tsp salt
2 Tbsp melted butter
3 1/2 c flour
1 tsp baking powder
1 1/2 Tbsp sugarDirections
In a large mixing bowl add the sour milk and soda. Let sit for about 5 minutes.
Mix all the remaining ingredients with the sour milk and soda mixture. Beat with a mixer until smooth.
Pour batter into a greased hot skillet. Flip over when browned.
